Emily Lake
Secretary
Emily Lake, who hails from Evanston, IL, assumed the role of Director of Urban Agriculture in 2007, a position created in recognition of her unflagging dedication and responsibility, after a UHC field internship in 2006 while completing a degree in Environmental Studies at Northeastern Illinois University.
She managed the community-based Gethsemane Garden for Sunlight of the Spirit until 2011, consults and leads on outside agriculture projects, is an environmental and agricultural educator at Hancock High School, and now serves on the UHC Board of Directors as Secretary.
Emily immersed herself in maintaining and harvesting the Rooftop Victory Garden at True Nature Foods while still an employee there. She was instrumental in the success of other urban agriculture projects such as the James Park Garden and 2613 Garden, responsible for the ordering and planting of seeds, pest management, cold frame construction, composting, and maintenance; while educating and directing the activity of volunteers and members of the organization.
Emily is also fluent in Spanish.
