Cafe UHC, part 2

Stir-fried pea sprouts make a delicious, nutritious addition to any meal.

Green fertilizer, which is plant matter grown, cut in place, and left on the ground to fertilize other crops and enrich the soil, was the original intent for raising green peas for use on the Rooftop Victory Garden.

First, Chef Mike cuts the top several inches off the sprouts (left) and leaves the rootstock (right) to continue to grow and create a living mat to help support other plants that will grow nearby.

Next, he lays the vitamin-C and iron-rich irridescent green sprouts out (left) and stir-fries them (right).

Finally, we eat (no photo available… I was busy eating).

Yum!
