Home Grown: Harvesting Potatoes

Healthy and secure food sources is an enjoyment and a goal of the members of UHC. Here you see Andrew with a handful of potatoes harvested from the basement of the UHC office.
These potatoes were not grown under ideal lighting conditions and yet we see significant production after just six weeks in a styrofoam box under 1/6 the amount of light that potatoes prefer.
These plants will be transplanted to the backyard of the UHC office where they will join Fava beans, Asian pear trees, an Apple tree, Lilies, Maple seedlings, Tomatoes, Horseradish, Onion, and a blooming Lilac bush. All coexist synergistically in approximately 400 square feet of soil.
